Margaret River’s very own gypsy wagon comes to town

Nicole Boeres said her hard-to-miss purple gypsy wagon food truck was a labour of love for both herself and Andy May, the man responsible for the custom made commercial kitchen.

“It was a bif project; Andy and I worked together to come up with a design resembling a gypsy wagon which he then built and completed last summer,” she said.

“It first appeared at the Western Australian Circus Festival In Karridale, where I sold juices and my icypoles.”

Since then, Ms Boeres has developed a menu which shes said suits the wants and needs of the farmers market clientele.

“My passion is local food, sustainable farming, gluten free and heathly options.

“I source as much food grown locally as possible to go into my food and enjoy the process of cooking fresh healthy foods that our local farmers have work hard to produce.

“I do believe its very important that we all try to buy as much local produce as possible.”

Treats such as falafel, sushi, buckwheat pancakes and chai icypoles are likely to appear on the Gypsy Wagon menu each week, and Ms Boeres said she was looking forward to adding icecream to that list.

“I’m also very excited about the hemp industry growing in this area and hope to be using it on my menu.

“I have been living in the South West for 17 years and my love for its oceans and forest is what makes this place the greatest joy for me, as well as my wonderful friends who also share my love for this place.”

Catch the Gypsy Wagon at the Margaret River Farmers Market each Saturday morning, and at the upcoming Margaret River Night Markets this summer before heading south to Karridale for the Circus Festival in January.
