Margaret River small bar and restaurant Morries has revealed plans to make cocktail drinking “practically healthy” for the silly season.
Exclusive to Morries, ‘Indian Summer’ is a sugar-free turmeric and blood orange gin and tonic created by mixologist Billy Phillips, and the venue hopes the new creation will be this festive season’s hottest cocktail.

“Turmeric is known for its health benefits and anti-inflammatory properties, blood orange and citrus fruits are packed with vitamin C and anti-oxidants.
“We make the tonic in-house, packing it full of probiotics,” said Phillips, the WA Good Food Guide’s 2017 Barman of the Year.
“What many people don’t realise is that standard tonic water is full of sugar, it’s almost as high as Coca-Cola.
“We make our turmeric tonic sugar-free, using agave and honey to sweeten it.
“’Indian Summer’ contains four kinds of citrus juice, lemon, lime, grapefruit and blood orange, it’s crazy delicious,” Phillips said.
“Gin is typically made with juniper berries, coriander, cassia bark, angelica root and rosemary and other herbs.
“I’d say it’d be the healthiest spirit on the market today.”
Owner of Morries Dave Astbury said that Indian Summer was offered on tap at the bar which meant the venue was able to release the drink without packaging, making it an environmentally friendly choice.
“We’ve had Indian Summer on tap for a while and it’s a proven hit, so we’re keeping it on tap over the summer,” said Astbury.
