The team behind a fine dining Japanese restaurant Origin 153 are about to open their doors in Vasse bringing fresh oriental flavours to the region.
Head chef Sunny Yoon will be in the kitchen while managing director Leah Kim will be leading front of house.
Ms Yoon said she loved cooking Japanese food because of its fresh ingredients and flavours.
"This is my chance to provide high quality food to the area," she said.
The trio moved to the region from Perth and found while there were many fine wineries and restaurants in the region there were not many traditional Japanese offerings.
Co-owner Hayden Hwang said initially they were disappointed, but saw an opportunity to use head chef Yoon's skills to specialise in traditional Japanese cuisine.
"We had the idea to open our own restaurant offering Japanese cuisine to local people," he said.
"Our target is to offer top quality food fusing about 70 per cent traditional Japanese cuisine with 30 per cent innovative dishes."
On the menu diners can expect sushi, sashimi, Japanese styled steak, fried food and noodles.
"We really love Japanese noodles, they are really nice, we guarantee it," he said.
"Japanese styled steak is presented and tastes different, it is based on the Japanese cooking style.
"We will also be offering a different style of kimchi, most people know it as red and spicy, but it can be white. Ms Yoon is a master of kimchi."
Ms Kim said they were really excited to be opening a proper Japanese restaurant in the region.
"My standard is high, I am really excited to be opening my own restaurant where the standard meets my requirements," she said.
"People have been so kind and nice and are really eager to visit the restaurant."
