Even in WA's mid west, at the iconic Shore Leave festival, the region's legendary food and wine scene is making waves.
Three of the industry's most respected names will head north next year to take part in the festival, which is now in its fourth year.
Wine and travel writer and television presenter Cassandra Charlick has been called up to host the Midwest Paddock to Plate event, alongside Margaret River born and bred chef Matt Stone.
The local flavour continues at the dinner, with Xanadu Wines created by acclaimed winemaker, Glenn Goodall.
"It's no surprise that passionate producers and a cross-section of winemakers and chefs either hail from or currently call Margaret River home," Charlick said from her home base in Margaret River.
"It's a place that celebrates a union of the good things in life: the romance of rolling vineyards and pastoral vistas, the breathtaking natural beauty of native forest and coastline, and exceptional produce and wine."
She said the combination of South West talent and Mid West produce would be a surefire hit.
"I cannot wait to see what Matt Stone crafts from the food bowl of the Mid West; it's another agricultural region in Western Australia that produces a phenomenal quality of produce.
"Matt started his career in Margaret River, so I'm excited to see the food and wine pairings for the Xanadu selection of wines that will be served on the night.
"Glenn Goodall is one of our region's most talented winemakers, so there will be no shortage of fantastic wine."
Stone said guests should expect a fun and innovative menu featuring celebrated seasonal produce.
"My role as a chef is to serve delicious food," he said.
"The less food has travelled, the better it is, and the better it is for the environment. It also means less packaging is needed. I love coming back to WA and am always inspired to work with local regional and native produce."
Shore Leave - named in honour of the region's rich maritime history and the connotations of holiday, leisure, and adventure - takes place in Geraldton and surrounds in April 2024.
This year, more than 30 events will run over five days, ranging from fine dining experiences, tours and live music, highlighting the region's seasonal produce and food and beverage innovators.
Midwest Paddock to Plate will see diners enjoying Stone's culinary creations under under the stars at Yanget Farm.
"As a wine writer and presenter, one of my key values is sustainability," Charlick said.
"It is essential for both producers and consumers to strive to make and drink wine as mindfully as possible with minimal impact on the planet.
"Matt is a leader in sustainability in the culinary world, so it will be fantastic to chat about what sustainability looks like in both Australian food and wine culture.
"You couldn't get a better destination for sustainable feasting than the paddocks of Yanget Farm, an agricultural farm that prioritises regenerative agricultural practices."
